Lyndi knows what it’s like living without certain foods due to allergies, sensitivities and conscience.

Not “rats” that I almost missed it. “Rats” because it’s grilled cheese.

Oh, how I long for you. I long for your beautiful elusive toasted warmth of gooey delight. How I adore your browned compact envelope filled with the epitome of comfort and delight in a bite.

How I miss you. Sigh. It’s not easy when you live gluten free and dairy free.

“Forget it,” a voice inside of me, “It will never work. You’ll never have that again. Give it up.”

I won’t give up. Grilled Cheese is an American right. So, what to do? What to do?  I grilled up a cheese sandwich, non-dairy and non-wheat style. That’s what I did. I rocked it.

It’s all about picking the right ingredients. And, if you’re in the same boat as I am when it comes to food allergies… you are painfully aware of all the less-than-amazing substitutes out there.

Here’s how the magic worked for me so you can recreate it for yourself:

National-Grilled-Cheese-Month-and-My-Substitute-For-“Real”-Grilled-Cheese recipe

Serves: 1 happy camper

Ingredients
2 slices of Udi’s (or Rudi’s) gluten free sandwich bread
2 tablespoons of Duke’s mayonnaise
1 slice of Rice Vegan American cheese (non dairy, non soy)

Instructions
Now comes the hard part… NOT!
1. Heat a frying pan up to medium-high heat.
2. Spread mayonnaise on one side of each piece of bread.
3. Place bread in frying pan, mayonnaise side down.
4. Once toast becomes lightly brown, place slide of fake cheese (I like to call it that) on one slice of bread.
5. Once it begins to melt, place the other piece of bread on it to make a sandwich (brown side up).
6. Wait for the cheesy goodness to melt and viola! A gorgeous and almost-like-the-real-think grilled cheese sandwich!

Let’s just fast-forward to the mouth-watering finale….

So there.

It IS possible to join in on the National Grilled Cheese Month celebration just like the rest of America!

“Don’t you forget about it,” a voice inside of me now says, “It WILL work. You CAN have that again… and AGAIN. You don’t HAVE to give it up.” And I didn’t. I won’t. Nor should you.
