Saturdays are for testing out recipes and giving you the skinny. But for the new site, we’re changing it up a bit. Each selected recipe will come from a food blogger from around the country. This week’s recipe comes to us from Northwest Arkansas and one of the first food blogs I started following WAY back about ten months ago…it’s the NWA Foodie!

The Ease

This one fits the mold in what I look for in a recipe—basic ingredients, easy steps, and nice presentation.  There are only about 7-8 ingredients used for this hearty soup…all easy to find in any grocery store.  Also, something that is very impressive about this recipe (and should absolutely never be overlooked)—it’s one pot cooking.  That’s big in my book.

The Taste

I love mushrooms—one of my favorite foods on the planet.  There’s not a mushroom I don’t like and shitakes are very high up on the list.  The one thing, however, that will really strike you about this soup isn’t the mushrooms.  It’s the creaminess.  But guess what?  No cream. 

The Verdict

Love it—will definitely make again.  Plus, my wife and I are both lactose intolerant, so this one is perfect for us.  I recommend leaving the soup a little chunky because there’s nothing better than the texture of a shitake mushroom.

Why you should go to this site…

I’m going to be totally honest.  When I first stumbled upon this site, I thought there was no way I’d be back.  Gluten free?  Stuff like that usually isn’t my thing.  But I have been back, many times.  I love the layout of Lyndi’s blog.  The graphics and her writing have a lot of personality, plus there are all sorts of deals, recipes, and promotions.
