On Saturdays, I find another food blog from around the country, test out a chosen recipe, and let you know what I thought. Let’s take a look at Erin’s Food Files.

The Blog
Erin’s Food Files is just another in a long line of great Nashville food bloggers. Her blog has a very simple, user-friendly layout, and with categories that make finding what you’re looking for very easy.

The Recipe
The Blueberry Crumble Bars were a hit, and extremely versatile. Eat them as an unhealthy breakfast (well, somewhat unhealthy), or even throw a scoop of vanilla ice cream on top for a gluttonous dessert. I hate super sweet desserts, and that’s what I enjoyed about this one–it’s not. Not too syrupy or sugary. It has very simple flavors and the crumble on top provides for a nice crunch and beautiful golden look.

The Ease
Pretty easy. The only thing that was as pain in the @ss was smashing the cold butter with a fork. But come on, how difficult is that? Everything else was mixing and layering. Think it took me about 15 to prep and 45 minutes to bake.
