It’s Tuesday…time for a Mighty Good Recipe!

We made this one for Dinner Club the other night–proving there is a somewhat interesting way to serve red potatoes.  It makes for a great presentation and the taste is pretty darn good as well.  One thing almost scared me off in the name of the dish…”Dill”.  I hate dill–the ugly duckling of the herb family.  But it works in this one.  As with most of the recipes I find, it’s pretty basic to prepare.  I’d recommend getting some medium-size red potatoes, cut them in half, and boil.  Drain, let cool down, and cut each piece in 1/8-inch smaller pieces.  Next, make a single layer of potatoes, add some of the olive oil mixture, and repeat process.  Just make a few hours in advance and let sit at room temp.  The actual directions call for you to toss the potatoes, but in my humble opinion, you’re risking f-ing up the presentation.  Serve on a nice white platter, and you’ll have fooled your guests into thinking there’s a master chef in the house.
