It’s Tuesday…time for a Mighty Good Recipe!

MAKE THIS RECIPE! It’s that good.  Don’t ask any questions, just make it.  I am 100% guaranteeing you will love it.  I’ve never even heard of Chicken Chilaquiles.  The name caught my eye, and after checking out all of the ingredients, I was sold.

The key is the ground chorizo–it turns into this beautiful gravy that blends with the chicken.  I only made one change to the recipe–I used one can of green sauce and one can of red.

Chicken Chilaquiles is a Mexican casserole that takes about 15 minutes to prep and another 15 to bake. The end result is a tasty dish, with a perfect level of spiciness (appropriate for children).  As you can see, I topped mine with some chopped green onions, sour cream, diced tomatoes, and a little avocado.
