It’s Tuesday…time for a Mighty Good Recipe!
I’ll be cooking a lot more in the upcoming year. This is something I am excited about. It likely means I’ll shed a few pounds (less eating out), but also, I thoroughly enjoy being in the kitchen. It relaxes me.
I recently moved. My previously small kitchen just got cut in half. Space is at a premium, but that’s no excuse. It just means I will keep things simple. Let’s see if this recipe does the trick.
Get yourself a few nice tuna fillets (about ¾-inch thick). Coat the fish with some olive oil and a generous amount of salt and pepper. Set aside. Take a container of Brussels sprouts. Chop off the ends. Cut each piece in half (vertical). Toss with olive oil, salt, and pepper. Transfer to a pan and cook over medium heat for about 20 minutes. Remove and give the pan a good wipe. Place pan back on the stove and set on High. Wait a minute or two. It is important to get the pan extremely hot. Add each piece of fish. Sear for 1 minute on each side.
As you can see, I’m a firm believer in rare tuna. It just tastes so d@mn good. So…there you have it. A simple dinner, consisting of only five ingredients: tuna, olive oil, salt, pepper, and Brussels sprouts.

It was so good, and fish is a little cheaper here in the grocery stores. But, that’s about all that’s less expensive:)
