It’s Tuesday…time for a Mighty Good Recipe!
I’ve been driving with the family all day. We finally made it to the WDC-area and am staying some great, longtime friends. Actually, it’s Wayne and Leah from What Ales You? fame. They prepared a delicious meal of spaghetti and meatballs. But this was not your average spaghetti and meatballs. Specifically, Wayne’s balls really stood out. I asked him if he be willing to share his secret. He obliged. Now, you can partake in his delicious balls. They won’t let you down.
Here’s the secret: get a bunch of ground chicken. It creates a less dense (than beef) meatball, and is easier on the waistline.

3lbs ground chicken
2 cups of bread crumbs
salt and pepper to your liking
Directions
Take a fistful of of the mixture. Form meatballs and cook in a pan with olive oil, until they are a crispy brown on the outside in a little olive oil (over medium heat). Take meatballs out and add to your tomato sauce. Cook on medium for about 30 minutes. Lower temp to simmer for 3-4 hours. Serve.
You will not be disappointed. So simple and delicious. Size does matter in this case. Make the balls big, they’ll stay moist.
