The Hard Way

I have long been fascinated with Eggs Benedict.  Obviously, if made properly, it’s absolutely divine.  But, it’s a high risk, high reward dish.  And, it’s as easy and as hard as you want it to be.  I’ve done the dry mix packages before.  Not bad and super easy.  Most of the time, I end up sacrificing a morning to make it the hard way–double boilers and constant stirring of the Hollandaise  sauce.  It’s not easy, but I LOVE the challenge of bringing everything together–the poached eggs, the English muffins, and the sauce.

Check out Mission: Food’s version.  It falls somewhere in the middle.  She uses a blender, which I’m guessing speeds things up, while at the same time, keeping that wonderful taste!

This is a great recipe to follow if you’re interested in making Eggs Benedict. But, if you want to go with the super hard version, just follow these steps: 1. Get a large pot of water boiling.  2. Take a smaller pot and add lemon juice and three egg yolks (whisk). 3. Hold the smaller pot just over the boiling water of the larger pot.  3. Continue to whisk constantly, adding small pats of butter one at a time. 4. Once you’ve added two full sticks of butter, the sauce should thicken and it is ready to serve.

The more you make Eggs Benedict, the better you will get at it.  Be prepared to f-up a few things the first go-around.  That’s fine, just learn from your errors.

Things to note about this dish… it’s not difficult, but well make a complete mess of your kitchen AND it is essential that you prep everything before the cooking process begins.  That means: toast the muffins, crack your eggs, boil your water, and chop any garnishes such as green onions.

Know this…if you are a man and make this for a woman, you will be gold!  Example, let’s say you’ve gone on 2-3 dates.  You’re looking to do something special, that will separate you from the pack (so to speak).  Make Eggs Benedict.  It will advance the relationship by a good 2-3 months.  Once word circulates to her other girlfriends and family, you’re stock will rise…QUICKLY!
