The ease
Started preparing this one, and like so many other recipes, I never read the directions all the way through before beginning. I had no idea this was a crock pot recipe. There are a few steps involved, so don’t think it’s just one where you can dump all the ingredients in the pot and run. But it’s still very easy. Also, if you have one of those stick blenders, I find that saves some time.
The taste
Hearty—what a perfect soup recipe for this time of year. You may want to consider preparing it as an appetizer for Thanksgiving. Make no mistake, with the half and half, milk, and cheese, this one won’t win any healthy awards. But it’s d@mn good. I was a little surprised the recipe didn’t call for salt and pepper, but she was right—it didn’t need any.
The verdict
This cream of cauliflower soup is an absolute winner, and I will definitely make it again. My little one was even crazy for it. That put a smile on my face since we’re having a hard time with her and veggies.
