It’s Tuesday…time for a Mighty Good Recipe!

I was in Kroger’s meat department recently and came across a package of ground buffalo meat.  Without thinking, I just threw it in the basket.  We’ve all done it…been very impressed with something we rarely see in the grocery store, and just buy it for the sake of buying it.

Fast forward to two days later.  I’m staring at this package of ground buffalo.  “What the f am I gonna do with this?”

Answer: The same d@mn thing I do with any ground meat I need to use in a hurry–toss in a bowl, add some bread crumbs, choice dried spices, an egg…and start forming some balls.

Set the oven on 350 degrees, place your balls on a baking sheets, and bake for 20 minutes.

Serve with a little bbq sauce and life is good.

Note: normal meatballs typically bake for 30 minutes, but buffalo is low in fat and thus will dry up if cooked for longer than 20 minutes.

Could you taste the difference in meat though? I’ve never tried buffalo meat…
