Saturdays are for testing out recipes and giving you the skinny. Each recipe comes from a food blogger from around the country. This week’s recipe comes from Cook Like a Champion.
The Ease
I tried to make my own croutons, and I’m not ashamed to admit it…I burned them. I was focused on the soup and too many kids tugging at my mental fortitude. Anyway, I diced all the veggies beforehand. That made things a lot easier. This is a very easy recipe, just keep an eye on things, and follow the excellent directions.
The Taste
This soup just wasn’t my style–t0o thick. But I added an extra cup of broth and that helped. A little of this soup goes a long way. It would be good for a large party where you could almost serve it as a “shooter”. Also, I know this sounds crazy, but this would make for an exceptional topping for some homemade enchiladas.
The Verdict
Don’t believe me? I plan to take this soup and make enchiladas with it. Heavy soups like this often don’t translate very well in this area of the country, but I plan to adapt it.

I think this is a couple’s blog (which is cool). The pictures are beautiful, the recipes are unique, and the entries are consistent. As mentioned, the directions for each recipe are very precise.

interesting. thick soup is not my bag, and enchiladas are… so… we’ll be there at 7.

Hi Kevin! Thanks so much for featuring our blog! I normally don’t like thick soups, either (I’m much more of a brothy soup girl). For some reason, though, this one didn’t bother me. Of course, my husband loved it, as this type of soup is more his style. Anyway, I can’t wait to see the enchiladas! Thanks again for the sweet words about our blog! 🙂
