The Ease

It’s Christmas, and like most people, I’ve been crazy busy.  That was one of the reasons I went with this recipe when I found it last week while food blog surfing.  It was so easy.  Just cut up some zucchini, beat some eggs in one bowl, create a batter in another bowl, dip, and throw in the oven.

The Taste

Awesome!  In fact, as I write this my daughter just said, “I really like these.”  I did too.  The zucchini were the perfect texture (not too firm and not too flimsy).  The bread crumbs and Parm created a perfect crust.  I loved the dipping sauce, especially the tang that came from the Dijon mustard and lemon juice.

The Verdict

No surprise here–winner!  But this one is golden on a few fronts.  It’s easy, doesn’t mess up the kitchen, and is healthy.  Perfect recipe to make as a snack or as a healthy alternate side dish.
