On Saturdays, we find a food blog from around the country and try out a recipe.  This week, check out Foodies at Work!

You know what I like most about Foodies at Work? It’s co-written.  If you follow The Mighty Rib, you know I am a huge fan of multiple writers heading up a site.  These two ladies represent Boston and New York …and do it quite well.

I love their logo. In fact, the entire site is right up my alley–very unpretentious, laid back, and easy to follow. What better recipe to sum up their concept than Made Up Pasta?

It’s really not a recipe, more an idea…and isn’t that always the catalyst for great cooking?  Just find what you have in the pantry and make it work.  And this one works!  The kids loved it, the wife loved it, and I loved it.

I was a little concerned about the pasta coming out dry.  This was not the case at all.  The excess water from the spinach, along with the olive oil, provided flavor and moisture to the dish.

I had some fresh rosemary in the fridge, and that worked well.  The best part?  The beans!  Just a perfect (and healthy) idea for this pasta dish.  Of course, I blended in some Parmesan, as well as shaved some on top.

Made Up Pasta takes about 15 minutes to prepare.  It’s a keeper!
