Chef Hale, Former Owner of Acadia, Teams Up with One Eleven

James Hale, the former owner of Acadia, comes up from time to time on the blog, with people wanting to know what he’s up to nowadays. Well, well, well…a friend of mine recently ate brunch at One Eleven and told me the chef is involved with the restaurant. Turns out it’s true,  Hale has teamed up with the morning kitchen crew at One Eleven and has added several new dishes to the menu. These include:

Capital Soul Plate – mixed greens simmered Southern style with Nueske’s bacon, orange soda, hot sauce and beer served with truffled chicken tenders and smoked gouda mac & cheese topped with portobello
Duck Salad – seared duck breast with spinach tossed in Guinness honey mustard, Capital spiced pecans, pickled red onions, cheery tomatoes and bleu cheese
Blackened Ribeye – served with crawfish coleslaw and cheese grits
Smoked Salmon Benedict – Smoked salmon on grilled rye with capers, poached egg, red onion and hollandaise

Folks with the hotel also said Capital Bar & Grill has added several brunch items to the Sunday menu. These include:

Herbed Waffle BLT – Crispy bacon with local heirloom tomatoes served with sweet potato fries and pecan syrup
Eggs in a Blanket – House smoked beef brisket topped with house made pickles served on fresh baked sourdough served with house cut french fries
Black-eyed Pea Casserole – House-made andouille, cheese and chipotle creme topped with two fried eggs
