It’s Tuesday…time for a Mighty Good Recipe!
Oh boy, this one is good….really good! I recently took a Central Market Cooking School appetizer class and learned how to make several new enticements. This one stood out.
Recipe from CM Cooking School
16 slices of pancetta
16 teaspoons soft fresh goat cheese
2 very ripe small pears (diced)
fresh thyme leaves
Preheat oven to 450 degrees. Place pancetta slices in single layer on large rimmed baking sheet. Sprinkle with pepper. Bake until golden (about 10 minutes). Using spatula, slide pancetta crisps onto platter. Top each with 1 teaspoon goat cheese and 1 pear slice. Sprinkle with thyme and serve.
Note: I placed my sliced pancetta in a muffin sheet, allowing the meat to form a little cup.

But I really like your idea of the pancetta on bottom, made into little cups. So cute! I’m using this idea for my next party 🙂
